One of the most notable roasters in Fukuoka prefecture, Coffee County, takes pride in their relationship with the coffee producers they source from. 

Founder Takaaki Mori felt that forming a deeply personal relationship with the coffee growers was imperative to becoming a serious coffee roaster. Prior to founding Coffee County, Mori actually lived on an hacienda in Nicaragua for several months -- he did the same hard work alongside everyone else, like cutting weeds and fertilizing each tree. This led to lasting connections with the people who make growing and producing coffee their livelihoods. Additionally, he used this time to carefully study the terroir, helping him absorb the particulars of the region and finetune his coffee knowledge before meaningfully roasting to highlight such qualities. After visiting multiple farms in Africa as well as Central and South America, Mori carefully sources coffees from the producers he has made reliable connections with. 

Coffee County currently roasts on two vintage Probat machines — Mori believes that relying on his senses and intuition yield a cup that better expresses his meticulousness for the craft and the time he has spent abroad on farms. 

Coffee County at its core is a representation of a personal journey — each cup exuding an appreciation and passion for the coffee journey. They have three locations in Fukuoka, and recently opened their first location in Tokyo in the alleyways of the Kitazawa area, where we enjoyed one of the best flat-whites we had in Japan!
