Apollon’s Gold is a Tokyo based roaster that specializes in ultralight roasted coffees, roasting selective premium coffees from renowned coffee farmers, such as Pepe Jijon and La Esperanza. They humbly began roasting as hobbyists, but have since gained substantial social clout for being one of the few ultralight roasters in all of Asia. 

Out of respect and appreciation for terroir, their goal when roasting is to bring out the unique characteristics of each region. Consequently, they tend to stay away from overly extreme coffee processes (double fermentation, carbonic maceration, etc.). In conjunction with sourcing coffees with classic processes, Apollon’s Gold roasts ultralight, which results in a distinctive and delicate, clarity forward cup.

Though small, their core team, who wish to remain anonymous, spend countless hours on their quality control to continue to maintain and improve their coffee. They recently opened their flagship cafe in Tokyo, where they utilize innovative brewing methods to highlight their unique omni-roasting style! 

On Degassing Apollon’s Gold Ultralight Omni-Roast Coffee

Ultralight roast coffee maintains a lot of the gasses that are typically released with a longer roast time. So, the result is a denser coffee that requires a longer degassing period in order for all of its unique characteristics to fully open up. 

Apollon’s Gold recommends at least 35-45 days of rest after the roast date, with the coffee peaking at 60 days post roast. 

Generally, the coffee’s complexities will start to fall off after 90 days post roast, though some suggest that ultralight coffees can still taste great past this time frame with the proper storage.

When brewed prematurely, the undesirable gassy notes will be evident in the coffee. As such, please use these resting measures as a guideline to ensure the best brewing and tasting experience.
